It's been a while since I've posted a video so I shared how I made salmon patties that we had for supper the other night. I hope you enjoy it. 2, 5 oz. cans boneless/skinless pink salmon, drained 2 large eggs 1/4 C. diced onion 1 heaping T. mayo 4 T. cornmeal 4 1/2 T. all purpose flour good pinch salt and pepper vegetable oil for frying Combine all the ingredients in a bowl. Heat about 1/4" oil in a skillet to around 350 degrees. Spoon patties into the skillet and fry a minute or so on each side

Hot Water Cornbread (makes 4) This is one of my favorites from my childhood, I hope that y'all enjoy the video. 1/2 C. self rising cornmeal 1/4 C. hot tap water pinch of salt Mix together, should be like a thin pancake batter. Heat 1/4" vegetable oil in a skillet to 325 degrees. Drop by 1/4 C. measurments into the oil and fry for about a minute per side. Drain on paper towels. I don't think I will ever get used to making these videos but I am trying my best to not stumble over my words. This one is on Southern Fried Cabbage, just like Nannie taught me how to make. An inexpensive meal that goes a long way and we enjoy so much.
