Each Crocus sativus flower has three red stigmas, which is the saffron. This is the only part of the flower which is edible. Carefully remove the stigmas from the flowers with your fingers or tweezers. If you have a large crop, pick the whole flower and tweeze out the stigmas comfortably at a table.
